2 lbs. Black Bear (ground with bacon, a pinch of Cumin, Onion Powder and Garlic)
1 14oz. can Kidney Beans
1 14oz. can White Beans
1 14oz. can Pinto Beans
2 14oz. cans Stewed Tomatoes (also use home canned stewed tomatoes when in season)
1 jar Homade Chili Sauce
1 yellow onion
1 large bell pepper
1 clove garlic (fresh, minced)
Ground red chili powder (fresh as possible)
Salt & Fresh Ground Black Pepper
1 12oz. Beer (I prefer an amber or any other non-light beer)
Brown the meat with onion, bell pepper and garlic. Add wet ingredients (do not drain the juice).
Allow to simmer for at least an hour, lid on or off depending on how thick you want it. Season with Cumin, Red Chili Powder, Salt & Pepper to taste.
So easy and so good. I like to make some Jiffy cornbread to go with it and top with diced onion, sour cream and cheese.
