Made my last elk roast today. Season can’t come fast enough

I have one elk shank roast left. I had plans of slow smoking it, but I think I'll wait for spring to do it. That will give me some time to look over a few recipes to make it tender and juicy. I HOPE.

That looks like a pretty substantial crust or coating on there, what is that if I may ask? The deer this year has been getting cooked with a mushroom and sherry sauce in my house. Goose goes well with sherry also, been using it a good deal on darker meats lately.
